Healthy Recipes in a Microwave Oven

The microwave oven is a small yet significant appliance in the kitchen. Not so much of a focal point as the refrigerator or range, it still is a daily-used cooker in many a home in the U.S. One might think that microwave ovens are only for heating up leftovers, but you can think again! Your microwave oven is here for you to provide healthy dishes just like your stove does. Below are several healthy recipes you can try in your microwave.

Scrambled Eggs

One can prepare a sumptuous egg breakfast in almost any form with a microwave oven, from omelets to poached eggs to quiche. A popular example is scrambled eggs with all the good toppings. For a healthy and fulfilling microwave breakfast, one can simply scramble an egg or two in a bowl, add two tablespoons of milk and some pepper and salt, and cook for a minute. Top with fresh spinach, cheese, or any other ingredient you prefer for an outstanding meal.

Tomato Soup

You don’t necessarily need your stovetop for heating up your tomato soup. You could always create a homemade, microwaved version that tastes far better than the canned type. Simply cut up a tomato, and add some tomato paste, chicken broth, heavy cream, salt, pepper, and basil, put them through a blender, and cook for ten minutes in the microwave. 

Chicken Fajitas

Like eggs, Spanish cuisine of many forms can turn out beautifully through microwave oven cooking. Quesadillas, enchiladas, and fajitas are just three of your options. As for chicken fajitas, one can chop up some chicken tenders, a red pepper, and half a red onion, and toss it in a covered bowl or a steamer tray with some oregano, salt, pepper, and chili powder. Microwave for ten minutes, and serve on tortilla chips with a dollop of sour cream, guacamole, or both.


Salmon is famously healthy, rich with protein, vitamins, and nutrients. Try sprinkling some salt and Sriracha sauce over your fresh salmon, and wet it with lemon juice, a bit of water, and some lemon wedges. Place it in a parchment paper pouch and microwave it for three and a half minutes. Meanwhile, you can prepare your sides, like sliced cucumber sprinkled with sugar, salt, and white vinegar.
